two months down and a lifetime to go

Two Months down with no meat cravings. Since the beginning of our journey, we originally agreed to cut things from our diet slowly; but we took the jump off the deep end and went cold turkey on letting meat go. So my husband, our two girls, and I have not had meat for over two months now. And honestly, we have been feeling great and having better digestion!

Of course, it was not easy going vegan because although the girls did not eat meat often: They did eat lots of dairy products, egg products, did have a taste for bacon, and pizza quite often. Our oldest loves pizza, so curbing her desire for it was very hard at first because we did not get to try any vegan options for it. We did shop at sprouts before our diet change and honestly turned out to be the best place to buy the majority of our vegan options. We ended up finding some great cheeses by Daiya, so delicious, and follow your heart. We did get to make homemade spinach and mushroom pizza, our kids loved it.

The hardest part was finding things my picky husband would eat. Honestly, we made it more complicated than it needed to be. We spent a lot of money on different freezer meals and different vegan options like multiple different kinds of milk, cheeses, nuts, lentils, and pasta. Some of the foods were not good at all, and others we did not know how to cook. Then my husband and I decided to stop making it difficult and make all the same food we would regularly eat and replace the meat in the dish. And it was probably the best thing we could have done in our transition. We were so frustrated that we could not figure out what to eat that the experience its self was taking a toll on us and especially our health.

Another problem that started to arise is that since we do not eat the meat that keeps us feeling groggy for most of the day. We have begun to snack on things a lot. So most of the day, we can have a meal and end up snacking on a million snacks and not notice sometimes. So we are still having a few issues with making balanced meals throughout the day. Changing to a plant-based diet does not make you completely healthy, but it does get your body in a better state than it once was with the animal products. Although it has been a battle making balanced meals, we have taken time out to try more adventurous foods at different restaurants and got my picky husband to try tofu for the first time!

So during our first month transitioning, we decided to go out to dinner for the first time eating vegan or plant-based. As a mother’s day dinner night with my babies, we went to a Thai restaurant called Thai papaya. It was a brand new place we had never been before, but the staff was very attentive at noticing we had a specific diet without even asking us. They came to us when a particular dish we ordered had something in it that we could not eat. It was the best service ever; If you’re ever in the DFW area, I highly recommend eating there the food was delicious, and the service was superb. Another place I highly recommend in the grand prairie area is a vegan spot called ITSO VEGAN.

ITSO VEGAN is the first full vegan place we have gone too. All the drinks were vegan and healthy. The sweet tea was amazing and made with agave. The sodas they carried are the Stubborn Brand made by Pepsi. The food was delicious, my husband and I ordered the nacho cheese fries, which my kids were addicted too! I must admit they were finger-licking good, and the cheese was creamy. My husband ordered some fried mushrooms with two sides, while I ordered a spicy chicken.

I can say our first two months was a lot of learning experiences and experimentation. The next thing to tackle is making a balanced meal.
